Thanks to the hard working community at NeoGaf, we now have some answers as to what the Hylian Text featured throughout the Legend of Zelda: Breath of The Wild demo says. The whole thing started when a tweet using the text was revealed to say "The Legend of Zelda" and things just went crazy from there.
Ultimately we didn't learn a ton, but we did learn the Sheak" seem to play a large role in this game, and that it would appear the development team put A TON of detail into this installment. See all the translations so far in the photos below.
