Is there a notable difference between the Wii U and Switch version of Mario Kart 8: Deluxe? Depends on what you define as notable. There's definitely an improvement for the Switch version although it's mostly smoother textures and lighting differences. You won't really notice is until you get to the section with Bowser in my opinion. Check it out below and pick up the game April 28th.
